Japanese Cheesecake
Ingredients:
250g Philadephia cream cheese
50g butter
100ml fresh milk
60g superfine flour
20g cornflour
6 egg yolks
1 tbsp lemon juice
¼ tsp salt
6 egg whites
¼ tsp cream of tartar
140g fine granulated sugar
Method:
1. Melt cream cheese, butter and milk in a double boiler.
2. Cool the mixture.
3. Fold in the flours, egg yolks, lemon juice and mix well.
4. Whisk egg white with cream of tartar until foamy.
5. Add in the sugar and whisk until soft peaks form.
6. Pour into a 8" round cake pan (lightly grease and line the bottom and sides of the pan with greaseproof paper).
7. Bake cheese cake in a water bath for 1 hrs 10 mins or until set or golden brown at 160C.


but it doesn't seem to be browning at the top! ^^"

Did you preheat your oven? Oven needs to be preheated at least for 5 minutes.
Did you open the oven door while it still baking? Never open oven door when it halfway bake.

well the cake turned out a bit too wet??
but i did preheat da oven for quite a while..
i think 160 might be a bit too low?
175 seems to be the right temperature.. (Comment this)
For the temperature, I guess it might be because of the heat element? Like oven and the microwave oven? Im using the microwave oven, I do has problems getting the right temperature too but not the cheesecake.

Found your blog just yesterday and fall in love with all the recipe you put in there! As I had migrated to Australia 1/5 ys back from singapore . I do miss all the food and now that I found your "place" .. I will definitely be visiting this place more often !!!

What do you mean by water bath? i use a normal oven so what is the temp to use and for how long?
