Chocolate Cake

Bake chocolate cake this afternoon, it supposes to be coffee cake but there’s no coffee aroma at all. It taste more like chocolate cake, must be the chocolate emulco and it has a little orange taste, it very soft and moist. Since there’s a strong taste of chocolate, I should name it as “Chocolate Cake”. I didn’t expect it turn out quite well.

 

 

I totally forgotten about the “Icing” it should be apply on top the cooled cake. It come to my mind after I had sliced the cake which already too late.

Chocolate Cake

Ingredients:
150 gm butter
150 gm caster sugar
A pinch of salt
2 large eggs

1 orange
3 tbsp instant coffee powder
1 tsp chocolate emulco
1 tsp rum

150 gm self-raising flour
1 tsp ground cinnamon

Method
1. Preheat the oven to 170°C.
2. Cream butter with sugar and a pinch of salt till light and fluffy. Add eggs one at a time and beat well.
3. Grate orange and add rind to bowl. Squeeze orange and mix three tablespoons juice with the instant coffee, chocolate emulco and rum.
4. Sift flour and cinnamon and mix into the creamed mixture alternately with the orange/coffee mixture.
5. Spoon mixture into greased cake pan. Bake for 40 minutes. Cool on a wire rack.

Icing:
175 gm icing sugar
2 tsp instant coffee powder
1 tsp cocoa
2 tbsp hot water
Vanilla essence

To make the icing, sift icing sugar into bowl.
1. Dissolve coffee and cocoa in hot water, then add to icing sugar with a few drops of vanilla essence and mix well.
2. Pour over cooled cake and smooth surface with a knife.
