Sweet Corn Pancakes

Make this Sweet Corn Pancakes just now. Using TarzenMom's Onion Bread recipe. I'm using half amount of the recipe cause insufficient flour and I did modify slightly. Makes 7 pancakes. I ate 3 slices and my sis had 4 slices! I kept some dough for plains pancakes and it taste like Roti Prata! Serve it with sugar eh yum yum. *Thumb up definitely makes it again with different filling especially the spring onion.

 

 

Pancakes With Sweet Corn

Makes 7 Pancakes.

 

Ingredients:

225g plain flour

175ml boiling water

¼ tsp salt (I suggest might want to increase to ½ tsp or more salt cause ¼ tsp it too bland)

50g margarine (I suggest use Ghee or Butter)

Favorite filling (I used sweet corn, I didn't measure it)

Sugar (Optional)

 

Method:

1. Sift flour and salt into a mixing bowl. Add in the boiling water slowly mix with a spatula.

2. Start kneading dough when they are not too hot to handle, form a smooth dough. Wrap the dough and rest for 30 minutes. Grease working surface and rolling pin with some oil.

3. Divide dough into 2 portions, roll out 1 portion dough, generously spread butter, filling and roll up the dough from 2 sides till together.

4. Roll out the remains dough, place the dough with filling on top it and rolled it up like cylinder. Cut into 7 small cylinders. Flatten cylinder with your palm, and it ready to pan-fry. 

5. Cook dough under low heat and pan-fry till it golden brown on both sides.

6. Serve hot with sugar.

 

Wrap the dough and rest for 30 minutes.
